The meal began with a stunning Grand Plateau, which included a chilled selection of lobster, oysters, shrimp, clams, and mussels. This was followed by a debut course of gnudi aux truffes—ricotta and Parmesan dumplings paired with Périgord truffles and Parmesan mousse.
For the main course, guests savored a ribeye from Snake River Farms, served alongside pommes purée and a rich sauce Bordelaise. Accompanying sides included sautéed spinach and button mushrooms glazed with veal jus. To complete the meal, a course of the fromager’s selection was offered, followed by a delightful tarte au citron, finished with lemon sabayon and a pine nut crust. Each dish was expertly paired with noteworthy vintages, enhancing the flavors of the meal and providing a seamless dining experience.
