A new dining option has arrived in Brunswick, Maine, with the opening of Baked on Maine, a breakfast and lunch café located in the former Great Impasta building on Maine Street. The café officially opened its doors on January 2, 2024, following a soft opening earlier in the week. Baked on Maine is the latest venture from the team behind two well-known midcoast bakeries, Wildflours Gluten-Free Bakery and Mae’s Cafe & Bakery.
The café’s menu features a variety of breakfast items and sandwiches for lunch, along with an assortment of sweet and savory breakfast dishes. Manager Ryan Ballard emphasized that Baked on Maine aims to provide a unique experience. “What’s not already here is a breakfast place on Maine Street in Brunswick,” he noted. The menu includes distinctive offerings such as smoked meat options, including smoked brisket and pulled pork, which are incorporated into both breakfast and lunch sandwiches.
In keeping with the tradition of Wildflours, which operates as a 100% gluten-free bakery, Baked on Maine offers menu items in both gluten-free and traditional varieties. This approach aims to attract a wider customer base. Ballard explained, “We were trying to decide if we were going to move Wildflours over here, or if we were going to do something new and feature Wildflours and Mae’s, and we chose to feature the two because making the café just gluten-free would really limit the customer base.”
The owner of Baked on Maine is Ned Horton, a real estate investor from Nashville who has ties to Brunswick. His team expressed interest in the Maine Street location as soon as the Great Impasta became available, recognizing the potential for a new café in the area.
So far, the response has been positive, with the café seeing a steady flow of customers during its initial days of operation. Baked on Maine is currently open from Friday to Monday, operating from 08:00 to 14:00 at 42 Maine St.
As Baked on Maine settles into its new location, it looks to establish itself as a go-to destination for breakfast and lunch in Brunswick, offering a fresh take on familiar favorites while maintaining the quality associated with its sister establishments.
